Quick Veggie Burger Recipe
Quickie Veggie Burgers
1 15 oz. can of red beans, drained and rinsed
1 3/4 cups of quinoa, cooked
1 medium-sized “baked” potato, cooked in either microwave or regular oven
1 egg
1 small onion, chopped
1/2 teaspoon garlic powder
1 teaspoon fennel seeds
pepper to taste
Preheat oven to 375.
1. Place beans in large bowl and mash them with either a fork or your hands until about half or more of them are smashed. Add cooked quinoa to the bowl.
2. When potato is cool enough to handle, add the inside of the potato to bowl. Chop up potato skin and place in bowl too. Smash potato, with your hands or the back of a spoon, incorporating it with the other ingredients.
3. Add onion, egg and spices and mix ingredients together.
4. With your hands, form the mixture into patties and place on cookie sheet that’s been coated with cooking spray. Bake twenty minutes. Turn over with spatula and bake another 15 minutes. Makes 5-6 patties.
